BBQ 101: Grill Like a Smith

You don’t need a fancy smoker or competition-level gear to serve up flavor-packed BBQ at home. Around here, we believe anyone can grill like a Smith — it just takes a few key habits and the right sauce.


1. Don’t Overcomplicate the Fire

Whether you’re using gas or charcoal, control is key. Keep a two-zone setup:

  • One side for searing
  • One side for slow-cooking

That’s how you get bark without burning.


2. Use a Thermometer. Always.

BBQ is about feel and flavor, sure — but undercooked or dry meat ruins the fun. Invest in a digital thermometer. Chicken hits 165°F. Brisket can go 195–205°F. Your guests will thank you.


3. Sauce at the Right Time

Don’t brush BBQ sauce on too early — it can burn. Instead, add G.W.S BBQ Sauce in the last 5–10 minutes of cooking, or right after pulling the meat to rest. Let it glaze, not incinerate.
